- 10 ounces frozen chopped spinach
- 3 tablespoons butter
- 2 tablespoons cream cheese
- salt and pepper
Microwave the frozen spinach with a few tablespoons of water, cover and microwave on high for 8 minutes. Stir and continue to cook another 3 to 4 minutes.
When the spinach is done, strain the spinach in a strainer, pressing hard with the back of a spoon to remove the excess water. Transfer to a bowl.
Stir in the butter and cream cheese until melted and creamy. Add salt and pepper to taste.
